Dancing Horses, Mariachi Band & Mexican Food
June is a very busy month in Cotacachi so this will one of many June posts. No, we are not in Mexico but at the grand opening of the La Tola Rosario Restaurant in Cotacachi. The party was over the top and fun. Yes, they had dancing horses and a Mariachi Band. The food was great with build your own burritos with ground beef, guacamole, sour cream, aji, pico de gallo, cheese, lettuce, refried beans all tucked into a huge flour tortilla.
Of course in true Ecuadorian fashion, the party did not get underway until 6:30 pm even though the start time was 5:00 pm. So around 6:15 pm I went home in a taxi to take care of Winky Boy with his food and insulin injection. Then I hopped back into the waiting taxi and went to join Billy Boy at the party. I did not miss a thing!

Thank you for following our adventures in little Cotacachi referred to as the Mayberry of the Andes. The next June post will be the Sock Hop with all of us oldies dancing to the oldies and then Inti Raymi.
