Texas My Texas
Back to Texas to visit with family, friends, and doctors! We arrived in Austin and then drove to Arlington to await our annual visit ugh with our doctors. Luckily with the life, we live in Cotacachi we are healthier than ever!
When we go back to Texas it is all about the food such as tender steaks, chicken fried, BBQ, and of course Mexican food. So I think we literally ate our way between Austin & Arlington. So bear with my pic of our Texas food extravaganza.
Oops, Texas Chicken is in Quito, Ecuador!

Holy Longhorn! In Ecuador, it is not unusual to see cows, sheep & goats meandering along the road. The first time of us while in Texas seeing a giant Longhorn walking along the road. Needless to say, he certainly has the right of way.

So what did we do besides eat our way across Texas? Well, this still involves eating but we took my son to H 3 for prime rib. It was wonderful to see him looking so well after his journey with cancer. Plus a great time with our grandkids which always involves projects. We joined the family in planting an oak sapling from our old home in Arlington. It will be fun to watch it grow. The tree that we had in Arlington was just a sapling we received one year at Mayfest and it grew into a tall beautiful oak. A project of painting and assembling wind chimes we gave the grandkids for Christmas. My granddaughter kept me entertained by reading me her favorite books. We were going to take the train to the Stockyards but turns out it was not running that day. However, we had fun at the petting zoo and the cattle drive. We even watched the Royal Wedding early one morning! So our time with love and moment to cherish. But as always it was good to return to Cotacachi and the land of tranquility after the hustle, stress, and traffic of good old Texas.
Great time in the stockyards video below.
Family Time
Stay tuned as I update my blog on the months that I missed plus June is a very busy time here with the Paseo de Chagra and Inti Raymi.
Thank you for following our journey in little Cotacachi which we refer to as the Mayberry of the Andes.
